There's no food like Tex-Mex. While I was at school, I literally missed quesadillas and chips and salsa and enchiladas and tacos. I couldn't find good Mexican food anywhere. Being back home is great because there are so many Tex-Mex restaurants near me.
I tried out a new restaurant that I had never even heard of. I decided to switch it up a bit and get enchiladas. I almost always get fajitas when we go to a restaurant. I only used to eat verde enchiladas at a local place downtown called Canyon Cafe, but unfortunately they are no longer open. They were literally the best enchiladas and I couldn't eat any other places's. When I found out they closed I was in shock honestly. Since I hadn't had verde enchiladas in almost a year, I figured it was time. These enchiladas actually exceeded my expectations. They had a little flair to them. These enchiladas were actually spicy. The sauce tasted great and I mixed it in with my rice and beans. It had a really great flavor and now I know where to come to get enchiladas!
